Chicken & Stuffing Sliders

I don't know what the real name is for this recipe but this is what the boy child calls them.  He LOVES them.  I actually am sick of making it but it is filling and cheap.  When you have teen boy that is in and out at all times due to all the functions he is involved in, it is good to have a recipe in the crock pot like this on hand.

1 Chicken (I use leg quarters in 3.5-4 lb package) You can get these really cheap!
1 can cream of chicken soup
1 can cream of celery soup
1 onion chopped
1 box Stove Top Whole Wheat for Chicken Stuffing

Boil up the chicken leg quarters.  Reserve the broth to add to other ingredients until you get consistency you want.

Prepare Stove Top Stuffing per box directions only use 1-1/2 cups water instead.

Remove skin & bones from chicken and place bite size pieces of chicken in crock pot.  Mix chicken with all the remaining ingredients adding reserved chicken broth to the consistency you would like in the crockpot.  Heat until bubbly.

Serve on buns.

      I would still pre-cook the chicken prior just for the fact that this recipe can burn easily due to the fact you want it thicker to put on the buns.  I also worry, probaby needlessly, that the chicken would be undercooked.  By doing the chicken first, you can control the moisture of the recipe.  This is almost like mixing and warming up.  It is also easier to control the deboning of the cheaper cuts of chicken.
